1 ball pizza dough
1 1/2 cups peeled, seeded, crushed tomatoes, salted to taste
1 1/2 cups freshly grated mozzarella cheese
1/2-3/4 cups oil cured black olives, pitted and quartered
extra virgin olive oil
Preheat oven to 500 degrees F.
Oil a baking sheet, then press dough ball into a flat round directly on the oiled sheet. Let the round rest a few minutes; this will relax the dough and make it easier to roll out. Then pat out the dough, as thinly as you like, oiling your hands if necessary.
Brush dough lightly with olive oil, then spread with the crushed tomatoes, leaving a thin edge. Sprinkle cheese on top of tomatoes, then follow with the olives.
Place the baking sheet in the oven or slide the pizza directly onto a pizza stone and bake until the crust is crisp and the cheese melted, usually 8 to 12 minutes.
