Spanish Gazpacho

 

4 cups tomato juice
1/2 cup chopped tomato
1/2 cup chopped cucumber
1/2 cup chopped green bell pepper
1 small onion, chopped finely
2 cloves garlic, minced
1 Tablespoon cider vinegar or lemon juice
1 Tablespoon olive oil
Your favorite summer herb
Salt and pepper to taste

Combine all ingredients.

- For chunky texture: season and serve as is.
- For smooth texture: puree in a blender; season and serve.
- For medium texture: blend half and combine with other half; season and serve.

 

Traditionally, this soup was thickened with pieces of stale bread.
