2 Tablespoon olive or corn oil
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 bay leaf
2 cups medium grain rice, washed
2 cups hot water
A good pinch of sea salt
Saute onion in oil until translucent. Add pepper. Saute for a few minutes. Add garlic.
After 30 seconds, add rice and bay leaf. Stir for one minute or until grains are all shiny.
Add water and salt, bring to the boil, and turn heat to low. Simmer covered, without stirring, for about 20 minutes or until liquid is absorbed and steam tunnels are visible in rice.
