Tabbouleh

 

2 cups bulgur wheat
6 cups boiling water
1 cups minced parsley
1/2 cups minced mint
1/2 cups chopped scallions
1 1/2 cups chopped tomatoes
1/2 cups lemon juice
1/2 cups olive oil
2 teaspoon salt and pepper

 

Add water to bulgur, let sit for 2-3 hours. Fluff.

Add all other ingredients. Serve at room temperature.

For better flavor, prepare in advance to allow flavors to meld.
