Fufu (African staple)

 

2 1/2 cups water
2 cups buttermilk baking mix, such as Bisquick
2 cups instant potato flakes
1 tablespoon butter or margarine
1/4 teaspoon salt

In 2-quart saucepan over high heat, heat water to boiling. Stir in buttermilk baking mix, instant potato flakes, butter, and salt. Reduce heat to low. With wooden spoon, stir mixture constantly 10 minutes until mixture becomes very thick and hard to stir. Take care, the mixture will be very hot.

Wet a medium-size bowl. Drop 1/2 cupful of fufu mixture into bowl; shake bowl until the mixture forms a smooth ball. Repeat with remaining mixture. Serve while warm.
