Lentil Curry (West Africa)

 

2 large red onions, finely chopped
3 medium tomatoes, finely chopped
5 cloves garlic, minced
Curry powder (a few tablespoons)
3/4 tablespoon chili powder
2 tablespoons vegetable oil
2 cups split lentils, soaked in water
Small can tomato paste

Combine vegetable oil, red onion, tomato, garlic, curry, and chili powder into a large saucepan and sauté at medium high temperature. Next, add soaked split lentils and tomato paste and let simmer.   Add water if needed.
