2 tomatoes, peeled, seeded, and finely chopped
1 small white onion, finely chopped
2 scallions, trimmed and finely chopped
2 jalapeno chile peppers, seeded and finely chopped
1 clove garlic, minced
1/4 cup chopped fresh cilantro
2 - 3 tablespoons lime or lemon juice
2 - 3 tablespoons white vinegar
2 tablespoons water
salt and pepper to taste
In a large serving bowl, combine the tomatoes, onions, scallions, chile peppers, garlic, cilantro, 2 tablespoons of the lime or lemon juice, 2 tablespoons of the vinegar, and the water. Season with salt and black pepper. Stir to mix. The salsa should be highly seasoned; add more lime juice or lemon juice and vinegar, if desired.
