Llapingachos (Ecuador)

 

2 lbs. baking potatoes, peeled and cut in half
salt and pepper to taste
1 large onion, minced
1/3 cup plus 1 tablespoon butter
1/2 cup cilantro, minced
1/4 lb. Muenster cheese, grated

Boil the potatoes until they are tender. Drain and mash them with the salt and pepper.

Sauté the onion in the 1 tablespoon of butter until it is soft and add it, together with the cilantro, 1/3 cup butter, and cheese to the potatoes and combine well.

Spread the mixture in a lightly buttered gratin dish or shallow casserole and place it under the broiler until little flecks of brown appear on the potatoes. Serve at once with peanut sauce, [Go to Peanut Sauce recipe] fried eggs, or sliced avocado.
