3 tablespoons minced onion
3 tablespoons butter
1 tablespoon minced jalapeno chili
1 tomato, peeled, seeded, and coarsely chopped
1/2 cup ground or finely chopped roasted peanuts
3 - 4 tablespoons water
salt and pepper to taste
Sauté the onion in the butter for 2 minutes. Add the chili pepper and the tomato and continue cooking until the sauce becomes mushy. Add the peanuts and mix well. Remove from the heat and slowly add the water to make a sauce consistency. Season with salt and pepper to taste.
