1 large bunch Swiss chard, washed and chopped
2 medium onions, chopped
2 tablespoons finely chopped fresh cilantro
4 tablespoons olive oil
2 tablespoons lemon juice
1/2 cup water
1 teaspoon paprika
1/2 teaspoon ground coriander seeds
salt and pepper to taste
1 cup cooked lentils
Place all ingredients, except lentils, in a saucepan; cook over medium low heat for 30 minutes. Stir in lentils; cover and cook for 10 minutes longer, adding a little water if necessary. Serve hot or cold.
